Smoothly shaves katsuobushi as hard as steel. This is a serious katsuobushi shaver made by a plane blacksmith.
The blade is made of high-speed steel (HSS), which maintains its sharpness for a remarkably long time. Through forge welding and forging techniques, it is further compressed, resulting in a shaver with enhanced tenacity and sustained sharpness. Freshly shaved katsuobushi looks as beautiful as flower petals and offers the best aroma and taste. We are also particular about the box that holds the shaved flakes. It is made from a premium paulownia wood box, crafted with wooden pegs that showcase the skill of the woodworker. It features an indentation for easy opening and is designed for long-term use. 
The 55mm is a basic size. High-speed steel is recommended for chefs who frequently shave katsuobushi daily. Between blue paper steel and high-speed steel, high-speed steel lasts longer. It can produce various forms of shaved katsuobushi ("hana-kezuri" "ito-kezuri" and shaved powder), suitable for a wide range of dishes.

How to shave katsuobushi (refer to images)
① Remove mold with a dry paper towel.
② Adjust the plane blade. The thickness changes depending on how far the blade is extended.
③ Shave by pushing from the head end, with the tail at an upward angle.
※ Powder will come out until the surface becomes flat.
④ After use, wrap in plastic wrap to prevent drying and store in the refrigerator.

How to extend the blade
① Tap the plane blade with a wooden mallet to extend it.
② Tap the left and right sides to align the blade straight.
③ The guideline is to feel the blade with your fingertip, about the thickness of a single sheet of paper.
※ Be careful as your finger may get cut. It may be difficult at first, but you will naturally learn by repeating the adjustment process. The thickness of the shaved flakes changes depending on how far the blade is extended.
How to retract the blade
Tap the corner of the plane body (the spot where one corner is chamfered) as shown in the image to retract the blade.

This katsuobushi shaver is a product requested by the Ibusuki Katsuobushi Association in Ibusuki City, Kagoshima Prefecture, which boasts the largest katsuobushi production in Japan, to the plane manufacturer Tsunesaburo. The desire was for everyone to easily enjoy shaving katsuobushi and to use freshly shaved flakes at their dining tables. They wanted people to savor the deliciousness that is different from pre-packaged flakes. This product was developed after much trial and error with that in mind. Honkatsuobushi, which takes 4 to 6 months to make, is extremely hard, and regular shavers sold on the market reportedly dull quickly. In this context, after inquiries to Miki City, a metalworking region, they reached Tsunesaburo and realized a collaborative development.
Although the sharpness may eventually decline with long-term use, it is possible to sharpen it yourself. However, sharpening a straight plane blade requires experience.
