Powdered high-speed steel (SPG2) Japanese knife. HARUKAZE Gyuto 210.
This premium knife is made from the ultimate knife steel, "Powdered High-Speed Steel Super Gold II." The 16-layer laminated steel is hand-forged and carefully finished with a hamaguri edge. The surface is etched with hydrochloric acid to create a three-dimensional laminated pattern. The handle is made from octagonal buffalo horn and walnut. It is lighter than ebony and features a beautiful wood grain. It is rust-resistant, holds its sharpness for an astonishingly long time, and has a beautiful Ripples. It is a well-balanced knife.
HARUKAZE Gyuto is ideal for cutting meat. Its tapered tip makes it easy to perform detailed tasks. Like a Santoku, it is versatile enough for meat, vegetables, and fish. As a double-edged knife, it can be used by both right- and left-handed users.
amenoma Check!
This knife with its beautiful walnut handle offers long-lasting, exceptional sharpness and will change your perception of knives. Because the blade is hard, sharpening it yourself can be very difficult. If the sharpness declines after years of use, we recommend sending it to us for repair. Walnut handle material has the characteristic of fading and becoming lighter with each wash. To restore its deep brown color, an oil finish with drying oil is required. Food-grade oils such as linseed oil, sunflower oil, and perilla oil are safe and recommended as drying oils.
As a general rule for all knives, dropping the blade may cause it to chip. Please be careful.
