How to shave bonito flakes (image reference)

This bonito flaker was commissioned by the Ibusuki Katsuobushi Association in Ibusuki City, Kagoshima Prefecture, the largest producer of bonito flakes in Japan, from Tsunesaburo, a plane manufacturer. We want everyone to easily enjoy shaving bonito flakes and use freshly shaved bonito flakes at the table. I want you to enjoy the taste that is different from the pack. With that in mind, I was able to create it after much trial and error. Honkatsuobushi, which takes 4 to 6 months to make, is extremely hard and cannot be cut easily with a commercially available sharpener. Meanwhile, we contacted Miki City, which is a production area for hardware, and Tsunesaburo reached us and we realized a collaborative development.
I think if you use it for a long time, it will lose its sharpness. You can resharpen it yourself, but sharpening a plane with a straight edge requires experience.
