This size is recommended for those looking for their first Yanagiba (sashimi) knife. The width of the sashimi fences sold at fish shops and supermarkets is about 80 to 90 mm, so this knife (180 mm) is just right. It is also useful for processing one squid. (Since the width is narrow, you can easily insert it into the body of a squid and cut it.) *Recommended for those who have purchased and processed a single fish.

As with all knives, there is a risk of chipping if the blade is "kneaded". please note.

*Can be resharpened and repaired.
