This is a premium knife made from the ultimate blade steel material, "Powdered Stainless Steel Super Gold II." 16 layers of laminated material are hand-forged and carefully finished into a clam blade. The surface is corroded with hydrochloric acid to create a three-dimensional layered look. The handle is made from buffalo octagonal walnut. It is lighter than an ebony handle and has a beautiful wood grain. It does not rust and has a surprisingly long-lasting sharpness. It also has beautiful ripples. It is a well-balanced knife.
Santoku knives can be used for all-round cutting of meat, vegetables, and fish. You can do all your household chores with just one knife. It is double-edged, so it can be used by both left-handed and right-handed people.

This knife with a beautiful walnut handle will change your concept of a knife, allowing you to enjoy its excellent sharpness for a long time. In addition, the blade is hard, so it is very difficult to resharpen. If the sharpness has decreased after years of use, we recommend that you ask us to repair it. The walnut handle material has the characteristic of fading and becoming lighter with each wash. If you want to restore the deep brown color, an oil finish with a drying oil is required. We recommend safe cooking oils such as linseed oil, sunflower oil, and perilla oil as drying oils.

This applies to all knives, but please be careful not to "scrape" the blade as it may chip.
