This is a core-stopping knife used to crush the growth point.
"Core-stopping" is the process of crushing the growing point of agave, cactus, etc. to increase the number of new plants. The growing point is in a recessed area, so you insert the knife deep into it and gouge it out neatly. It is made with a 6mm width and is long and narrow, so it is easy to insert the sharp tip into the gap. The blade material is "white steel" with a glaze finish.
