This bonito flaker was commissioned by the Ibusuki Katsuobushi Association in Ibusuki City, Kagoshima Prefecture, the largest producer of bonito flakes in Japan, from Tsunesaburo, a plane manufacturer. We want everyone to easily enjoy shaving bonito flakes and use freshly shaved bonito flakes at the table. I want you to enjoy the taste that is different from the pack. With that in mind, I was able to create it after much trial and error. Honkatsuobushi, which takes 4 to 6 months to make, is extremely hard and cannot be cut easily with a commercially available sharpener. Meanwhile, we contacted Miki City, which is a production area for hardware, and Tsunesaburo reached us and we realized a collaborative development.
I think if you use it for a long time, it will lose its sharpness. You can resharpen it yourself, but sharpening a plane with a straight edge requires experience. If it is difficult, we can provide after-sharpening (approximately 1,100 yen). Please use it with confidence.
