Forged, thin-blade finish for unparalleled sharpness.

Rugged and cool. Kaji Knife Petty150 IBUSHI.

This is the sharpness only a blacksmith can create. It is the "Kaji Knife" Kitchen knife series. We used VG10 stainless steel, which combines sharpness, durability, and ease of maintenance, and made it even tougher through cold forging. To achieve greater sharpness, we adopted a 2mm blade thickness. The lightweight finish ensures you won't get tired even during long tasks. Naturally, it is made of stainless steel, making it rust-resistant, and it features a cool design with a hammer-forged texture and a "kiritsuke" (dropped tip) finish. The handle is made of smoked oak, characterized by its deep color while still retaining the natural texture of the wood. It is finished with oil to bring out a deeper hue. The handle for the petty knife is cut where the back of your hand rests, fitting gently in your hand to prevent fatigue during long work sessions. This is a knife that will bring constant surprise and smiles the moment you make a cut.
Kaji Knife Petty150 IBUSHI is a collaboration product between Ikeuchi Hamono and amenoma. It offers a sharpness unique to handmade craftsmanship cultivated over many years. The Petty type is compact and easy to maneuver. The 150mm size is versatile and can be used for meat, vegetables, and fish. (It can even cut soft bread beautifully with just a light pull.) It can be used by both left- and right-handed people.
The smoked oak used for the IBUSHI handle is wood that has been treated with smoke. When washed, brown water (tannins dissolved in water) may bleed out initially. This is harmless, so please use it with peace of mind.

A kitchen knife is an essential tool for cooking. The Kaji Knife makes cooking even more enjoyable with its astonishing sharpness. The hammer-forged pattern on the blade and the smoked-color handle create a design you will never tire of and will love using for years to come. The cutting feel is so effortless that you might find yourself cutting too much! While it is known for maintaining its sharpness for a long time, improper use can cause the blade to chip. As the handle is made of natural wood, it will fade with each wash, but you can restore its original deep color by maintaining it with specialized oil. Regular maintenance is the secret to long-term enjoyment. After cooking, please wash it by hand and let it air dry in the shade thoroughly before storing. Using a dishwasher or dish dryer can cause the handle to crack.

※Resharpening and repairs are available. For details, please look at the sharpening instruction images in the "Maintenance" corner.
We can resharpen chips in the blade at amenoma. We can also replace/repair the handle if it cracks.
